beetroot recipes?

I was wondering if anyone has got any tried and tested beetroot recipes.

I've got 4 of them and i really haven't got a clue what to do with them as i've never cooked a beetroot before.

Apart from eating them in a cheese and beetroot sandwich that's as far as my culinary skills go.

any ideas would be greatly appreciated.

    I struggle a bit with beetroot ?

    It's nice roasted - just peel and roast with some other veg (although the other veg will be coloured a bit pink by the beetroot).

    Or roast and serve with thyme an dgoat's cheese.

    Or make chutney.

    Beetrooy chutney is an easy one, boil and peel the beetroots shove in food processer with salt pepper sugar and red wine vinegar and whizz until mixed and chopped relatively small but not mushed

    I've also made chocolate brownies with beetroot and they are great, I think it was a HFW recipe

    Thanks loads sophie and skittalie, the roasted one with goats cheese sounds good.

    i'm very tempted by the chutney idea though, do you know how long it will keep for?

    The beetroot chutney I make is along these lines

    It keeps ages and ages and ages, unopened in the cupboard and opened in the fridge. I've used it when it's been well over a year old and it has been absolutely fine.

    The method Skittalie posted sounds like it would be ready sooner (mine needs about 6 weeks ot mature) but not keep as long. I could be wrong though, I am not an expert pickler.

    Fabulous! I had a beetroot chocolate cake the other day too - that was lovely as well.

    Beetroot soup is excellent too - bright pink/purple!

    Thankyou.

    i am going to try the chutney and have printed both ideas out. looking forward to it as i've never made chutney before.

    now all i need to know is what to do with a very shrivelled kohl rabi gradually dying in my fridge.?

    It will last about a week in a sealed container in the fridge, I usually make it for buffet tables or picnics, my H and dad are cheese and chutney mad so it always gets eaten quickly here!

    We have this quite a lot at home .... it's a Slimming World recipe.

    Chiili, Chive and beetroot Risotto (free on Green)


    1 red onion finely chopped
    2 garlic cloves sliced
    1 red chilli sliced
    1 sm carrot diced
    500g beetroot diced
    2 tbsp chives finely chopped
    12oz risotto rice
    1 1/2pts chicken stock
    salt and pepper

    4 tbsp low fat natural yoghurt

    Cook onion,garlic and chilli in fry light - gently
    Add beetroot,veg and herbs and rice
    Add stock slowly and a little at a time til absorbed
    Simmer until rice just cooked and maybe most stock used 20 - 25mins
    Garnish with parsley + add ‘tooping’ of nat yog.

    all recipes have been printed out and i'll let you know how it goes.

    the risotto sounds good as i tend to play it safe with mushrooms and pea risotto

    Simon Rimmer has a fabulous recipe for a spicy beetroot soup I also have a beetroot and orange chutney recipe which sounds odd but is rather delicous.

    Beetroot chocolate cake is good - I've tried it with both cooked and raw beetroot and the raw was better. I either roast it and eat it hot or boil it and eat it cold.

    As for the kohl rabi, that will roast too and it also stir frys well.

    I'm glad you posted this, we've got four in the fridge at the moment and I always struggle to know what to do with them. I can recommend chocolate and beetroot cake, although not too bitter on the chocolate as it can be a bit rich, I'd say no more than 70%. Haven't tried the brownies but can see what I'll be getting H to do with his day off tomorrow!
