Buffets

A buffet style should not alter the timings much. But generally they usually are quicker than a 3 course full service. But then there are buffets that are almost full service too.

I mostly see buffets when the wedding ceremony is later in the day - 4 pm onwards and sometimes are done as BBQs. Often called twilight weddings.
