I read that you usually send out the save the dates about 9 months to a year before the wedding and the invitations should go out about 2 to 3 months before the wedding. Probably a good idea to keep back on a few of the save the dates in case you wish to change the guest list?

I would hold off for a bit - the earlier you send the invites, the more likely it is that people will lose them or forget that they need to reply!

Is there anything else that you can do to 'wedding plan' to scratch that itch?
