Can you freeze an iced sponge cake ?

I'm going to make a snowman shaped cake for Christmas (using the Aldi cake mould that KTC kindly got for me) but know that I'm going to be really busy around Christmas so was thinking of making it in advance and freezing it.

I know my mum always used to freeze sponge cake - which is what I want to make - but I'm not sure whether the icing will survive.

    I've never tried it myself but I remember asking our wedding cake lady if we could freeze the cake as we had 2 whole layers untouched and 2 layers with just 1/4 out of them and she said no - because of the icing.

    Could you not make the sponge now and ice it nearer Christmas?

    Lili, I had a feeling that might be the answer.

    I think the icing is going to be the hardest thing hence wanting to get it out the way so as to avoid last minute disasters.

    I really don't think your icing will survive the freezing and defrosting process. Can't you freeze the sponge and ice the defrosted sponge closer to the time?

    That's why I've given up trying to make proper cakes - far too stressful! Apparently my cupcakes are to die for (I find them too sickly) but they are easy to make and look good and seem to make people think I'm some kind of baking goddess so from now on I'm not attempting anything else!

    I'd love to make cakes like those of LTP fame but it just looks like too much hard work...

    I think that's going to be the only way to go Lou. Ah well, it's not as if I have to fit work in or anything. My life is so busy doing nothing at the moment that I actually have no idea how I managed to fit in a full time job.

    Make the cake, freeze it and slap on a load of Betty Crocker's frosting when you get it out of the freezer.
