I'm looking for a bit of advice. We are having our wedding on a family farm, so we are having to hire in independent caterers. The venue is quite remote so all staff would need to travel a few hours and stay overnight. I fully expect to pay the additional travel costs and overnight accomodation too. However the quote we have been given has a 'per head' cost for food but then an additional charge for staffing, including the event planner, chef, kitchen porter and all waiting staff.
Am I naive to think the per head cost would include the cost of the chefs etc? Given we'll need to pay for all the catering equipment hire, gas, crockery etc, if the chef charges are not included in the per head cost, then what is other than just the cost of the raw food? Which doesn't equate to the cost per head quoted - obviously there will be some profit in there but we're at £65 per head and this doesn't include any wine.... so it just seems an awful lot.
Any advice appreciated...if it's the norm on not.
