Cauliflower & Swede - inspire me please

anjumanji, 2 September, 2008 at 18:47 Posted on Off Topic Posts 0 6

I have both in the fridge and I'd like to cook them before they go mouldy. Please could I have some recipe ideas, I've never done swede before and have only ever had cauliflower in lamb curry.

I use swede by cutting it into chips, shaking up with olive oil, parprika and parmesan and baking them. Apologies if this is an idea I stole from someone here - can't remember where I got it.

Cauliflower is nice parpoiled then fried up in curry spices.

Thanks for that BM. Will the swede work without the parmesan? Can't stand the smell or taste of the stuff unfortunately

How does one make cauliflower cheese? Being of Asian descent this isn't one of the dishes I was bought up with!

I'm sure it would work without the parmesan, or you could use a different cheese.

You may have to google for quanities as i just whack it all in and dont weight it,

plain flour, butter or margerine, milk into a saucpan and heat, stiring continuously until it makes a thick smooth sauce then you need to leave it to cook for a few minutes. Season, add a teaspoon of english mustard, grated cheese of your choice, i use strong cheddar and parmesan.

Cook the cauliflower, drain, put into a dish with the sauce covering it, sprinkle more cheese over the top and brown under the grill.

The sauce recipe i use i think was delia smiths all in one sauce, saves you faffing about making a roux or whatever it is called.

Thanks for your help Ginger. I'm not a quantity person either usually just cook by eye, as long as I have an idea I'm normally ok.

Bombay Mix, do you think I could prepare the swede and freeze it, then cook it when required? I'm doing the veg for my baby and I don't think she can manage a whole swede just yet!
