Christmas cake storage

jaz, 28 October, 2008 at 10:15 Posted on Off Topic Posts 0 11

I baked ours last night and just as I put it in the oven I read on the recipe it could be made up to 6 weeks before or longer if frozen... I thought by the nature of Christmas cake it could survive well wrapped for longer than 6 weeks. Am I being dim?

Is there anything I can do to store it best other than freeze it (our freezer is full of stuff)?

Also does anyone else get really paranoid that it isn't baked right in the middle and have the urge to cut through it? ?

Don't bother freezing (although I think Janeh said freezing for a short while can speed up maturing?), it will keep for ages.

I wrap mine twice in paper (never put foil directly onto cake, it can't breathe), then in foil. I then stick them in carrier bags and put them in the cupboard under the stairs. ? My cakes are too tall for any tins I have and they've always been fine.

Aslong as your pokey thing came out clean, its cooked in the middle..

I have never frozen ours, just wrapped it in double layer greaseproof paper and then on the lid of a plastic storage box with the box bit over the top and sealed. I then treat it like my hamster whenI was a child. Get it out once a week and feed it.

I get cake fear every time I make a cake for anything other than to be just eaten by us.

H overfed our cakes last year and although they tasted fine (I believe, I hate the damn things!) but were very wet. ?

I used quite a lot of alcohol on our already so I might leave it for a little while before feeding again or all our Christmas visitors will have to stay over ?

I've already wrapped it in paper, then foil but will put it in some bags and at the back of a cupboard. I'm so excited, it smells like Christmas and everything ?

Mine is double wrapped in baking parchment, then foil, then in a sealed cake tin I bought specially for it. It lives on top of the spare room wardrobe.

How do you feed yours? I've been sprinkling 2 tablespoons of brandy over the top once a week.

My mum always made her Xmas cakes at Easter, so they had enough time to be fed. She's a bit odd though I think

    ?

Can I ask a related (probably dim-witted) question please?

My mum always used to wrap the tin in paper before baking...what do I use to tie it with? Is there a special type of string?

    Thanks!

We tied the cardboard on with one of H's shoe laces this year. ? Any kind of string will do though.

Mines in a cake tin, I've put some kitchen paper in the bottom and over the top of it but I havent; wrapped it anything like baking paper or foil. I baked it two weeks ago and I've alreayd poured over half a bottle of bandy on it (thats a small bottle of brandy btw not a litre bottle!). I expect I'll marzipan it in the next week or so then ice it towards to end of November (I've baked it for work and I need to give it to them on 27th Nov).

Uncoated cotton string is best. I have heard of a friend using plastic coated string and having a rather rubbery melted mess to clean off the bottom of the oven afterwards! ?
