Creme fraiche instead of soured cream?

Sunflower, 20 April, 2008 at 11:45 Posted on Off Topic Posts 0 5

Hello

Trying to make a lower fat version of a cheesecake, can you use low fat creme fraiche in place of soured cream or will this taste wrong?

Thanks Foodies!

I wouldnt use low fat creme fraiche. cheesecake demands high fat, it just doesnt work well with low fat subs.

sour cream is very similar to creme fraiche though, its the same process in the making. if you do end up using the CF, use slightly less sugar than the recipe demands.

Nothing low fat will really work betty. low fat anything in a cheesecake is a no no, it needs the fat, thats the point.

Thanks NickJ (and bettyb for your suggestion), I appreciate where you are coming from with the whole ethos of a cheesecake but good to know that creme fraiche can be a substitute if required for any weight watching guests!

Am I being dim? I thought that creme fraiche (not low fat) was as high in fat as the soured cream would be, give or take?
