Defrosting wedding (fruit) cake for reuse (christening)

Morning all

Has anyone done this? I have 2 tiers of our wedding cake which is a fruit cake (iced), and we would like to use it for Isobel's Christening.

It has been in the freezer for 5 yrs - is this too long and should I just throw it away now?

If we can use it we want to have it re-iced/decorated - how long do they take to defrost and does it matter how long the cake is out of the freezer before we eat it - i.e. if I take it out 2 weeks before the Christening will it be okay to eat?

All thoughts much appreciated.

    Fruit cake doesn't even need to be frozen to keep for 5 years - as long as it's a rich fruit cake it will keep in a cupboard for that long as long as cool and dry.

    Depending on size it could take 24-48 hours to defrost, but you'll probably want to feed it with some brandy for a week or two before reicing.
