Dinner Advice - sea bream

Ali_G, 27 January, 2014 at 14:47 Posted on Off Topic Posts 0 8

I have two fillets of this fish. Never had it before, never cooked it before.

Any suggestions?

ETA. I obviously meant SEA bream, although I'm sure seam bream would be equally as nice haha.

I love sea bream. Have only had it in restaurants though.

It's very similar to sea bass (only nicer, i think) so try searching for sea bass recipes instead?

Sea bream is my OH's favourite, so I don't mess about with it much: cook in the oven in a foil parcel with a slice of onion and a squeeze of lemon for 10 mins or so, then take out, brush the skin with melted butter and grill until it has some brown bubbly bits (2mins). If I've got the frozen fillets from Aldi, I either defrost them first or oven cook for 20-25 mins.

I'm very jealous! Hope you enjoy it :-)

We cooked this dish recently and it went down a storm. We couldn't find rainbow trout so the fishmonger said you could use sea bream or sea bass and it would work just as well.

Probably too late now but I would oil them on the skin and season with salt and pepper, then cook them in a medium hot frying pan skin side down til the skin crisps up, about 3/4 mins? Then flip em over and cook quickly on the other side. Leave to rest for a few mins. Serve with new potatoes crushed with olive oil and watercress and tender stem broccoli. Yum.

How did you cook them in the end?

I usually just put them in the oven with a wedge of lemon but I love it so would be interested to hear even more ideas.

We didn't have them in the end last night ? we had turkey escalopes instead.

I shall, however, be doing them tonight, so will use one of your suggestions!
