this bloke seems to know what he's on about and he refrigerates and then leaves to warm once poured.

I'd store at room temp unless perhaps it was the height of summer. Real ale is not designed to be served chilled.

Best served cool, not chilled. I tend to leave my beer outside the back door at this time of year. Seems to work ok.
