Fab coleslaw recipe please

Gingey Wife, 4 August, 2008 at 14:48 Posted on Off Topic Posts 0 10

I've never made coleslaw but think its just onion, cabbage, carrot, mayo. Sounds dull. How can I jazz it up?

I tend to just bung red and white cabbage, carrott, and onion in to a bowl and add low fat mayo. Not loads though as i don't like runny coleslaw. I suppose you could add some sultanas or a bit of cheese to jazz it up a bit.

I had one in a restaurant that I keep meaning to try to reconstruct as it was fab.

I think it was carrot, white cabbage and celeriac with a honey and mustard vinigarette dressing instead of mayo.

I make mine with a mix of mayo and salad cream, as I prefer it tangier.Or for a very fattening creamy version use mayo, double cream, black pepper and paprika for the dressing.Either way I like the vegetables finely sliced, or even grated.

I use a mixture of mayo and natural yogurt (about 50:50). Also I add loads of black pepper. Add mustard if you like it a little hot.

Thanks all. Do you get red cabbage in the summer?

I got a red cabbage in my veg box 2 weeks ago and made a fab coleslaw with it - much nicer than with white cabbage. I grated an apple and a large carrot with half the cabbage, then miked with mayo and white wine vinegar.

    Delicious.
