My first thought is that in a gathering of 130 people, you are bound to have some people with dairy/gluten intolerance - and you could well have some people who are allergic too. I'm not sure what the gluten and dairy-free pizza options would taste like, but it might make sense to look at having a second food truck which includes something else.

I was looking over the Red Robin menu with prices , and it actually seems pretty reasonable for what you get.
