Foodies - Am making a fish pie...

EmmaLouLou, 19 August, 2008 at 08:49 Posted on Off Topic Posts 0 4

Am hoping to attempt this one http://www.channel4.com/food/recipes/chefs/gordon-ramsay/posh-fish-pie-recipe_p_1.html

First question - Does this sound nice or can you reccomend a different recipe (I may add some scallops to it)

And also the recipe says to add egg yolks to the mash... can I just ask what this does? Does it give it better flavour?

Thanks

Em (who is definitely not thinking of going to Waitrose and buying a ready made fish pie to pass off as her own)

That recipe sounds fine, although if you want to see another, have a look at this offering from the Hairy Bikers:

I doubt the egg yolks are an essential ingredient. The high fat content will make the mash richer, and probably aid with browning. I ususally just use a slug of good olive oil.

    I use Jamie Oliver's recipe: http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_14180,00.html

It's really easy. I tend to leave out the spinach and use creme fraiche in place of cream.

I made a fish pie recently - I used this recipe and it worked well (I skipped the Pernod):

I use the jamie one too, and like hazel use creme fraiche. i leave the spinach in (dont bother steaming it though) and omit the hard boiled eggs.

the gordon one sounds ok, but as much as i like fennel i dont fancy it in fish pie. and i'm not a fan of vermouth so i'd leave that out

and like pieman i just put some olive oil in the mash,

I also use Jamie's, but don't change anything. It is very rich with the cream instead of creme fraiche but is yum for a special occasion! Sometimes do it with creme fraiche if it's just for H and me though.
