foodies - what is pared lemon zest?

    receipe says 3 strips pared lemon zest - I know lemon zest is the outside of the lemon, but wondered what pared meant! - and 3 strips is not 3 lemons?

    There you go - there's a lemon being "zested" You could also use a fine grater on the lemon if you don't have an actual zester.

    It means peeled, so done with a paring knife, or vegetable peeler, rather than with a zester or grater.
