Foreigners marrying in uk

Hi everyone!!
I am Portuguese, I have been living in London for almost 7 years and have settled status. My partner is Italian, here for more than 3 years and pre settled status.

We are going to get married next June in Portugal. We have venue, church and photographer...
The bureaucracy required in Portugal is absurd: all religious weddings count as civil ( we need the baptism papers from both of us for the religious wedding + apparently we need to start the process here. For the civil documents I just need the ID but we need my partners passport and certificate that he is mentally able to marry ?) all has to be translated apparently.So I went to check what we need to Marry in UK: and is just passports, and proof of address (because we are both from EU) so I am wondering... did any non English person married on civil here and then religiously somewhere else? I am thinking maybe is easier to marry here on civil just to make it legal and then do the programmed party in Portugal.

    Provided you get married before June 2021, I'm not sure you would need anything more than a UK citizen needs:

    Details of the final venue for your ceremony

    A valid passport, UK birth certificate (if you were born before 1 January 1983) or national identity card from the EU, European Economic Area (EEA) or Switzerland

    Proof of your home address

    Proof of any name changes

    And a proof of address.

    There's nothing to stop you having a civil ceremony here and then a celebration in Portugal. If you want a church wedding, I know that here, you can't have a church 'wedding' after a civil wedding, but you can have a wedding blessing - you can basically do everything you would do at a wedding as long as it's clear that you are already legally married. So you can have vows, but you add something like 'I reconfirm my promise to...' in front of them, so everyone knows it's not the actual marriage.
