Frozen chicken, reheating help needed

Hitcher, 21 December, 2008 at 13:17 Posted on Off Topic Posts 0 21

I have just made a Chicken Pie for tonight. However the chicken was frozen, I cooked it and have made the pie.

Is it OK to leave it to cool and re heat tonight or because the chicken was frozen do I need to cook the pie and eat it now?

Dont want to get food poisoning before Christmas!!

Thanks

You cooked the chicken while it was still frozen? If so I wouldn't eat it at all. It could make you ill.

If you had defrosted it, then cooked it then it will be fine to reheat later.

I poached it when it was frozen. Should I not have done that?

This is why I buy meat from butchers and cook it the same day, useless atf freezing stuff.

No, you should never cook chicken from frozen. It needs to be completely defrosted first. Don't eat it.

Actually, it's OK as long as the chicken is piping hot throughout. It's not ideal, because with big pieces, it's hard to get it hot in the middle without cremating the outside, but it can be done.

Hazel, I'm really surprised by that - although i totally trust you on it - because I remember my mum drilling it in to me that you can't cook chicken from frozen.

It is ok as long as its piping hot all the way through. I too had the "never cook chicken from frozen" speech from my Mum when younger !

It's a pretty standard rule, but the reason behind it is because it's hard to heat it thoroughly and evenly from frozen. It's not the action of cooking from frozen itself that is dangerous, but eating chicken that has not been thoroughly cooked through. It's a particular problem if you're using something like a slow cooker where the core of the meat is left lukewarm for some time as bacteria will grow really quickly in these circumstances. It's easiest, therefore, to say not to do it.

The US food safety chaps say it's OK to cook from frozen on the hob/oven

Remember you can get things like Chicken Kievs that you're supposed to cook from frozen.

Fool! I could be telling you anything. It never ceases to amaze me that people actually listen to me ?

Oh yes, bottling your own vegetables is a great idea. Oh, I'm sure the chicken will be fine by the radiator for a couple of days. And raw kidney beans are lovely and crunchy aren't they?!

i ever fail to be amazed at the seemingly large number of people who s grasp of food hygeine is utterly lamentable.

What is that all about anyway? A recipe I followed recently said to wash the lamb fillets. I didn't bother.

That's a whole other topic ? but it was a recipe book for babies/toddlers. Written by a lady who suggests completely ridiculous baby routines and who has been slated on many sites....but I picked up a few books for recipes and her's was one of them.

Last time the subject of meat washing was discussed on hitched, despite a number of sciencey types explaning in detail why this shouldnt be done, it didnt stop a number of peole from saying "my mum does it and so i do it". it was eye opening to say the least, and those stubborn meat washers have their placed firmy fixed on the thick list.

Meat-washing is another one where the "but it's for religious reasons" card gets played. Let's hope God protects people from the salmonella they're spewing all over their kitchens ?

I've never washed any of my meat! I'm reading this and thinking "what?!"

However, I did study food and nutrition at school 100 years ago! and I know the basics.I'm just very very daring and lazy.

But i do always spray my worktops after with dettol kitchen spray?

? ahh, you've just reminded me that Mum and I had a row about this on Christmas Day last year, and we're likely to have it again this year too. She's a meat washer, and didn't want to listen to the science. She just said "but you don't know who's touched it." Clearly, cooking it to a temperature that kills germs will not kill and lurgies from those who have touched it previously ?

We also rowed about 'catching' colds from getting cold / going out without a coat. She thinks I am weird and argumentative (moi? ?)

I have to say though, I am planning to cook my turkey a la Nigella this year, but do feel uncomfortable about soaking the turkey in brine for some reason. What should I do with the water afterwards? I fully expect my mother to gloat.

Whenever I have had this conversation with my mother, and the cantankerous aunty-in-law, they both say it's because you don't who who has "touched" the meat before it gets to them. When I explain about cooking through etc etc they always retreat to the "well I've always done it and I haven't been sick, what a load of old crap" line.

I used to wash meat, mainly because my mother always had. However, since applying a little logic I haven't done so. Thankfully I haven't been ill from either method, but I can understand how it's a lot less likely with unwashed meat. So I stick to that.

I'd just pour it down the drain outside or the sink. I think there's less of a risk with this than spraying water around as you're washing stuff under the tap.
