gainsborough tart - could the mixture be frozen

Hi,

I am making gainsborough tarts and decided for a change I would make mini ones.

I have made way too much mixture and so wondered if the mixture or if I made up a loaf tin sized cake could this be frozen before cooking.

Ingredients include:

shortcrust pastry

milk

flour

1 egg,

strawberry jam

butter

caster sugar

Do you think I could make up a loaf tin with the left overs and freeze for another week or would it turn to mush.

    Oh well too late now ive gone and made a load of them.

    I would bake them all and then freeze them.

    Thanks for your reply I think i will need to freeze some as I have 36 of them.

    Just hope they keep well and are edible when defrosted
