Hitched sausage casserole recipe...

Does anyone have it to hand? I had it saved but I think my H must have deleated it when he was cleaning up the computer.

    I think this might be it? Can't think why else I have a sausage casserole recipe saved to file. ?

    Ingredients

    1 tbsp olive oil
    8 sausages (i use chorizo ones)
    1 large onion, chopped
    2 garlic cloves, chopped
    2 tbsps plain flour
    900ml chicken stock
    3 tbsps brown sugar
    2 tbsps tomato puree
    2 tbsps balsamic vinegar
    200g puy lentils
    100g dried cranberries
    2 bay leaves
    salt and pepper

    1. preheat slow cooker. heat oil in frying pan, fry sausages until browned. transfer to plate.

    2. add onion to pan and fry until lightly browned, add garlic abd flour, stir in stock, sugar, tomato puree and vinegar, season and bring to boil

    3. bung it all in slow cooker with lentils and bay leaves and stir. cook on low for 6-7 hours, serve with warm crusty bread.

    Well the actual liquid is still liquidy bit most of it is absorbed....

    Can I ask what the cranberries add to the flavour? Im not sure about them, can you do it without?

    They do add flavour and suck up liquid, do it without add a bit less liquid

    Is it a sweetness they add? I can't work out in my head what it would taste like!

    They don't taste as sharp as they do normally but they add a sweetness with a bit of sharpness. work well with a psicy chorizo sausage - could probably do without with standard pork sausages

    Although Legless' recipe is fab and I have made it several times before, when I asked the other day I was out of several of the ingredients and couldn't get out to the shop as my car was at the garage.

    I found this recipe on the net and it was truly lush and so bloomin easy and used ingredients most people would have in the cupboard - so if you fancy something different.....

    8 Sausages

    Chopped onion

    2 Cloves of garlic, chopped

    1 tin of baked beans

    1 tin of tomatoes

    streaky smoked bacon (i used a whole pack as it needed eating but you could use less!)

    500ml beef stock

    1 glass of red wine

    fresh thyme

    approx 2 tablespoons of chopped parsley

    bread crumbs - approx 2 slices worth

    Firstly pre cook the sausages, chop into pieces and set aside

    Fry off the onion and garlic and then add the bacon

    Once bacon is cooked through add the sausage pieces

    add the stock, beans, tomatos, wine and 2 sprigs of fresh thyme (guess dried would work aswell). Season to taste

    leave to simmer for 10 mins or so

    pur into casserole dish, scatter breadcrumbs on top (I also added a bit of grated cheese!) and bake in oven for another 10 mins.
