How do you make your macaroni cheese?

I am going to indulge with a cheese fest tonight & am looking for ways to make my macaroni cheese even tastier.

Any tips?

    Nothing fancy here. Big spoon of butter, two spoons of flour, some milk and half a block of cheese.

    I add onion and bacon to mine with parmesan on top (tried it with Red Leicester but it was just wrong) ?

    I make a white sauce and then stir in mature cheddar, followed by proper short cut macaroni (I use marshall's, it's slightly curved and nicer than little straight tubes.) I sometimes add in some cubed pancetta or bacon fried in a little olive oil with garlic.

    Yummy, it's my favourite meal but I prefer it when someone else cooks it for me. ?

    Add wholegrain mustard to the white sauce, also some halved cherry tomatoes to bake on the top.

    Mrs Magic - I may have some left over....

    So, I have added an obscene amount of cheese (Emmental, parmesan & Montgomery's cheddar), sauted some mushrooms in butter & garlic and added a few cherry tomatoes. Sprinkled (yet more) cheese on top & a sliced tomato. It's in the oven as I type this. I've made enough for 2, but I bet I scoff the lot

    Ooh yes, I put mustard in mine too. Usually just Helman's mustard powder in with the flour.

    I don't like tomatoes on mine but I have to cover half with tomatoes for Mr M.

    Wish I'd seen the mustard tip before I shoved it in the oven - that sounds good. I'll have to remember for next time OH is away (the only time I get to eat macaroni cheese)

    Tinned toms drained and bacon and onion

    Hmm shame I'm not upto cooking at the mo, else I may have had to eat that tomorrow or Monday! I don't think my H could do it (he's a terrible cook despite his best efforts!)

    OOOOOOOHHHHH... i love cheese sauces!!

    Our top tips would be really strong cheddar and a good dollop of wholegrain mustard!

    I also use Helman's mustard powder when making the white sauce. This may sound weird, but I sometimes crush a small bag of lightly salted crisps and spinkle them on top with the cheese for a crunchy topping!

    Edited to say that garlic bread crumbs also work as a fab topping!

    Oh I know, it's so wrong it's right. I will be paying for this all of next week. Seeing as I'm staying in a hotel all week I WILL be going to the gym after work each night AND get up early to swim. <yeah, right icon> ?

    I stir an egg yolk into the cheese sauce mixture, mix it with the pasta then fold through the egg white, whipped to stiff peaks. It makes a slightly souffled version which is just fab. I think it's a Delia recipe.

    I just gorge on macaroni cheese. TBH I've never even considered having it with anything else. Hmmm, hope OH goes away again soon so I can try a new approach to macaroni cheese ?

    I use the ll on one method and then chop up frankfurters and add them to the pasta while it's cooking (soyou get the ymummy salty taste of the sausages in the paste. then I mix all three together and put crushed crisps on top, cheese & onion works best, also crushed hula-hoops are fab as well.

    I'm sorry but that sounds so wrong. As does adding tomatoes, onions, blue cheese or bacon. None of those should sully macaroni cheese. hurumph.

    Adding cot up hot dogs to the mix, or cherry tomatoes

    Am def going to have to try the mustard powder thing
