how long do iced cakes last in the air?

How long could i leave iced sponge cakes out before they started going hard?

Any ideas?

Just wondering how we are going to store everything.

    Id say a day.... depends if they are all over iced or sponge with ice topping???

    cant you get some cheapy plastic storage boxes and store them at the venue? buy them at the last minute? dont know what to suggest, sorry.

    Not sure really- most likely with rolled icing possible marzipn as well but maybe only on top and sides (not the bottom- think that will be too much icing for small cakes)

    Just concerned that if we stack all cakes together may damage them- but they will probably be quite robust i"d think??!!!????

    Think i'll just have a go- cheers girls

    Can I recommend the world's best product? Plastic storage boxes called lock and lock. They're air-tight, so would probably be really good for storing your cakes in. Also they're tough plastic, so would be good protection as well!

    Comes in various sizes and I can't recommend it highly enough! I'm sure it would be useful.

    But in black and gold with ribbon around them like a parcel- also maybe not that high (my cakes don't rise that high!)

    Sitting directly on the glass of the stand

    I've been googling and most either ice in sugar paste not rolled icing- i think i may just experiment (diet out of the window)

    Doc shell

    Sugarpaste is rolled icing - they are the same thing. The cakes in the picture are iced with rolled icing/sugarpaste. If they are sponge and are well covered (i.e. a good thick covering of icing with no holes or places where air can get to the cake they will last a good few days. Leaving them out in the air will not harm the icing at all - what you need to avoid is the sponge underneath going stale and as I have said that will depend on how well covered they are as the icing should seal the cake from the air and they will then last 3 - 4 days in the air with no problem at all.

    We would mount them onto the glass/acrylic sheets and store them in cardboard cake boxes like that until we need to set up the display.

    If they are fruit cake again as long as they are sealed they will last for months in the air with no problem.
