How to change guests invitation options from ceremony, reception, buffet

I have had this issue. I as a default mine only selected ceremony, it wouldn't let me change so I had to delete all my guest and re add. You will then have to tick the box for who is attending what.

On a mobile, click on the event (e.g. ceremony) and then 'Add guest'. It should bring up a list of people who aren't already in that event.
To remove, click the tick box next to their name and a bar appears at the bottom of the screen with some options (move them to another group - e.g. friend to family or coworker; remove - this should give you the option to remove them from an event if they're in more than one (e.g. ceremony and buffet), or remove them entirely).
