Irish mince stew?

Hi people...

I have a load of beef mince in my fridge that needs to be used by Wednesday and I just had a brainwave. My nan used to make the best stew with beef mince but I am talking 20 years ago before she died and I would have noone to ask for the recipe now.

Does anyone have a basic irish stew recipe that uses beef mince? Every one I've found is lamb...

    So can't you just use one of the lamb recipes but use beef instead? <confuddled>

    it sounds delicious btw. i have a recipe which is a hot pot with mince and baked beans. sounds rank but it isn't ?

    I make this sometimes, its comfort food : )

    Fry off the mince with some chopped onions until mince is browned. Make up a pint or pint and a half of beef stock - pour over mince. Add chopped carrots, chopped potatoes and (optional) some tomatoe puree. Bring to the boil and then simmer until potatoes and carrots are soft. If you need to thicken stir a spoonful of bisto in a small amount to boiling water and add to the stew - or add gravy granules. Season well with salt and pepper.

    I could do, yes, but the lamb recipes have rosemary etc in them which wouldnt go as nice with beef.

    I dont use herbs, just because its the way my Mum makes it but you def could, maybe some thyme would be nice?

    My nana used to make the best Stew and dumplings. It would simmer for hours on the hob. Pearl barley the works!

    I'd make a big batch of cottage pie and freeze.

    Not with me but it would be made with neck or shoulder of lamb so no good for mince. Sorry I typed way to fast, am trying to work to ?
