Key Lime Pie

I have some friends coming over tomorrow evening for chilli, fajitas and mojitos. I was thinking of making a key lime pie as well. Nigella has two in HTBADG one baked and one not. I was wondering if anybody has tried either and what they thought or if anybody has a tried and tested recipe

    I have a fantastic recipe, it's Momma Cherri's- Mildred Hubble can confirm how wonderful it is. I can type it out for you, but not till a bit later on. Really easy to make, main ingredients I can remember are, limes (no *** sherlock) Condensed milk, digestive biscuits, eggs.

    Not Nigella's but this one is fab and soooooo easy to make.

    In fact I whipped one up while simulteneously eating my breakfast and feeding the munchkin this morning!

    I usually find it takes more like 20 mins to cook though!

    Key Lime Pie

    Crust (you can substitute a normal pastry crust if you prefer)

    1 ½ cups crushed digestive biscuits (UK version)

    1/4 cup sugar
    1/3 cup butter, melted

    In a small bowl, combine the crumbs and sugar; add butter and blend well. Press onto the bottom and up the sides of an ungreased 9-in. pie plate. Bake at 375°F (190°C) for 8 minutes. If you prefer a softer crust, don’t pre-bake – just chill for 30 mins before use.

    Filling

    5 egg yolks, beaten

    1 (14 ounce) can sweetened condensed milk

    1/2 cup key lime juice

    Preheat oven to 375°F (190°C).

    Beat the egg yolks until frothy, add the sweetened condensed milk and lime juice. Mix well (I usually use the hand mixer). Pour into shell.

    Bake in preheated oven for 15 minutes. Allow to cool. Top with whipped cream and garnish with lime slices if desired.

    Actually I was mistaken there are no digestive biscuits! I am pants cook, but even I managed it and it was gorgeous

    Momma Cherri's key lime pie For 6- 8

    250g ginger nut biscuits

    125g butter melted,

    400ml can of sweetened condensed milk

    2 eggs

    125ml freshly squeezed lime juice, about 6-10 limes,

    juice 1 lemon,

    grated zest 2 limes

    ice cream or whipped cream to serve,

    slices of lime to garnish

    Crush the biscuits until powdery. Transfer them to a bowl and add melted butter. Stir well place in the base of a 23cm pie tin and pat into place

    Put the condensed milk and eggs in a bowl and stir with a fork, gradually adding the lime and lemon juice, the mixture will start to thicken. Add half the lime zest and pour the mixture over the top of the ginger crust. Sprinkle the remaining zest on top. Place in the oven, preheated to 180/ 4 and cook for 10 mins only, don't be fooled by the look of the pie into thinking you need to cook it for longer, it is meant to be custard like. Once cooled place in fridge where it will continue to set

    I've done this one loads, it's dead easy and quick even though it feels so wrong to be buying condensed milk ?

    I substituted grape nuts for ginger nuts as grape nuts are quite hard to come by in my local supermarkets
