I don't like the grittiness of semolina or ground rice in shortbread. To me, it should just melt in your mouth, not be overly crunchy. I've been using the same recipe for the past 30 years from my trusty GH Children's Cook Book. ?

    150g (6oz) plain flour

    Pinch of salt

    100g (4oz) butter

    50g (2oz) caster sugar

Line a baking tray with greaseproof paper. Sieve the flour and salt into a bowl. Add the butter, cut into small pieces. Rub butter into the flour with your fingertips until the mixture resembles breadcrumbs. Mix in the sugar then, using hands, knead until a ball forms. On a floured board, knead until quite smooth. Gather into a ball again and transfer to baking tray. Roll to a 1cm thickness. Crimp the edges with fingers, prick all over with a fork.

Bake in a cool oven (Gas Mark 3, 300F) for an hour. Cut into petticoat tails while still slightly warm. Leave to cool. Don't attempt to move to a cooling rack while hot as it will fall apart.

Use Nigella's recipe, you will not regret it. I've tried loads of shortbread recipes as Mr G loves it, and they've all been pants, but hers is fabulous.

    100g Plain flour

    50g Cornflour

    100g soft butter

    50g icing sugar

Cream butter and sugar, then mix in the flours in until you get a soft dough. Form this dough into a thick sausage, wrap with cling film and chill for 20 mins. Then slice the sausage into biscuits, dredge with caster sugar and cook at 160 degrees C (130 for fan oven) for 20-30 minutes. My oven is hot so 20 does it for me. They;ll spread a little, but not much. They are divine, really.

I think rice flour is important to get that fine, crunchy texture in shortbread

i just buy Cow and Gate Baby Balance Pure Baby Rice and use that as it's actually finely powdered rice with no other ingredients. plus it comes in small quantities. tesco online and ocado have rice flour but in large (500 g to 1 kg) quantities

below are the ingredients i use to make shortbread:

    250 g butter

    2 cups plain flour

    1/4 cup caster sugar

    1/4 cup rice flour
