Thai Green Curry Receipe??

Does anyone have a nice Thai Green Curry receipe I could copy?

Can seem to find a nice one anywhere, ideally one with prawns or something similar.

    I make my green curry the same way with veggies or chicken or prawns...

    Add green curry paste and coconut milk into pan, then poach whatever meat / fish you want in the mixture.

    Add chopped basil, sugar, something else - soy sauce maybe (haven't made it for a while) and whatever veggies you want and cook for a bit...

    Voila!

    I don't really 'do' recipes and tend to just ad lib when cooking

    Do a 'Yahoo' search. I did one for chinese curry last week and loads came up.

    Yes but how do you know which are any good??

    Proper Thai Green Curry is a bit complicated IMHO (making the paste from scratch, trying to find Thai aubergines etc), but I can recommend this one from Waitrose which I've made with chicken or prawns?

    I normally use a Keith Floyd recipe which I do from memory, but this is also fab, and you could substitute green curry paste for yellow.

    I use Thai green curry paste - available in Sainsbuggers and from Thai food shops - and gently fry this.

    I whizz up a stick of lemon grass, a good knob of ginger, a couple of green chillis and lots of corriander and add that to the paste. If I have it I also whizz up galang galang (sp).

    Let it gently fry for a few minutes and add in a can or two of coconut milk.

    Depending on what I am cooking I would add in bamboo shoots and water chestnuts and let it all simmer for half an hour or so and then add in prawns and cook for another 5 minutes or until the prawns are properly cooked.

    Served with rice and a sprinkling more of corriander.
