Thank you - chorizo, potato & chickpea stew

No idea who posted the recipe on here ages ago, but I saved the recipe, and made it the other night - it was yummy.

    Ooh, I haven't made this in ages.

    Here you go:

    Potato, Chorizo and Chickpea Stew

    2tblsp olive Oil
    1 large onion, peeled, chopped
    170g chorizo, diced (big sausage works better than slices)
    3 large Desiree potatoes, peeled, diced ( I guess any potato would do really)
    1 tsp paprika

    1 tsp chopped garlic

    ½ tsp chopped chilli

    1tsp chopped ginger
    1 tbsp red-wine vinegar
    1 x 400g tin tomatoes, chopped
    1 x 400g tin chickpeas, drained
    salt
    pepper

    Heat oil, fry onion till soft.

    Add garlic, chilli and ginger.

    Add chorizo for 2-3 mins.
    Add potato for another 2 mins.
    Sprinkle on paprika and fry for a further minute.
    Add vinegar, chickpeas and tomatoes.
    Cover and simmer until potatoes are soft.

    This is a firm favourite in my house - it's so quick and easy. My recipe is slightly different though - no garlic or chilli, and I add red ppepper.

    Family favourite here too. We don't use potatoes or red wine vinegar though.

    Cor, I could just eat that now.
