Tried & Tested Leek & Potato Soup recipe

Does anyone have one they will share with me. I have googled but really don't fancy Delia's cheat one amongst others. I will be sifting through my numerous Good Food Magazines once the kids are in bed as well.

    This is a weightwatchers recipe and is absolutely scrummy.

    1 tbsp polyunsaturated margarine

    1 large onion, chopped finely

    500g leeks, chopped finely

    500g floury potatoes, peeled & chopped

    3 tablespoons chopped fresh parsley, plus a few sprigs to garnish

    3 vegetable stock cubes dissolved in 1l hot water

    300ml skimmed milk

    salt & pepper

    1. Melt the marg and saute the onion & leeks until soft - about 10 mins

    2. Add potatoes, parsley & hot stock & bring to boil. Cover, reduce heat and simmer for about 20 mins until the veggies are tender and potatoes begin to break down.

    3. Add milk to the pan and reheat gently. Season with salt & pepper.

    It's dead easy and absolutely delicious - if you don't have fresh parsley, dried works fine. and I always blend with a stick blender first.

    Thank you for that and even better it's WW as should really try and get back on it. No parsley so will have a look see what I can substitute it with or just buy some tomorrow!

    I always use:

    400g leeks

    200g potatoes

    1 medium onion

    750ml veg stock

    250ml milk

    Roughly chop all veg and sautee in oil for about 10minutes careful not to let it catch. Add veg stock and simmer for 20 mins, then add milk and blend. Season well

    Easy peasy and has always been lovely

    No it wasn't me! ? Baby Buns I used your recipe last night as I had everything I needed and it was lovely. Will try the others too. Thanks again.

    I'm afraid I'm another Delia fan when it comes to leek and potato soup although I don't use frozen mash, I just bung in a potato or two until soft. I tend to bung in a dollop of dijon mustard at the end aswell.
