Weightwatchers smoked mackeral pate

Can't help with the specific WW one, but I made a scrummy one on Thurs that comprised one pot Quark cream cheese, 2 peppered smoked mackerel fillets (check them for bones), juice of a lemon. Bung it all in a blender, give it a good couple of minutes to get it all really smooth. The pepper off the fillets is usually enough. I'd hope it's fairly healthy as Quark advertises itself as virtually fat free.

Or as Gordon would say, Quark. Fish. Lemon. Whizz.

Could I improvise with non peppered mackerel (sainsbuggers sold out of peppery ones) loads of black pepper and philadelphia or would that be vile? No Quark in stock either today.

Elle that sounds great. Why do you have to grill the fillets though? Surely they are already cooked and I want to serve it cold.

Well, "normal" smoked mackerel pate is made with philadelphia (at least mine is). It 's v. high fat though, so if you want the WW element, I'd go with very low fat soft cheese, or even cottage cheese, which works if you blitz it.
