What happens if your witness doesn't come? Can you change it on the day?

My wedding is today! But unfortunately I found out that my witness is not coming due to COVID.
I told my registrar who the witnesses will be a while ago. I was wondering if that could now change?

We didn't need to provide details until the witnesses arrived, so I'm sure it will be fine - otherwise, how could people manage who just rely on finding two witnesses on the street?
But for your own peace of mind, I'd try to get through to the registrar's office as soon as they open. You don't want to be feeling anxious about it right up until the ceremony.
