What herbs/spices for a sausage casserole? relatively urgent help required please

I'm making a sausage casserole and so far have bunged sausages, chopped toms, mushrooms and peppers into a casserole dish. What herbs/spices am I missing and anything else that should be in there?

    How about onions?

    Sage goes well with pork (assuming your sausages are pork?)

    I go for the general 'mixed herbs' pot for casseroles normally, unless it's chicken casserole I might just do thyme.

    And your in MK! I didn't know that, you're near me!

    I would put some stock in, if you have enough liquid already just crumble an oxo cube in for flavour otherwise make up some stock to add and then put pretty much any herb, or mixed herbs! I like sage with pork but thyme or rosemary would work well too. Just depends on what u like the taste of really x

    How could I forget a bl00dy onion! ?

    Also I have pork stock cubes so that will help add a bit of liquid

    I have Thyme so that can go in. I'll add pepper but not salt so I can give it to Deacon too.

    Oh and how long would you cook it for and what temp? I'm useless without a packet mix ?

    Mr P always adds mixed dry herbs (we're very basic here) and a bit of worcester sauce or tobasco, tomato puree, onions, mushrooms, carrots and celery.

    Ooh I have tom puree and didn't put any in. It's cooked now but keeping warm in the oven. I will let you know how it tasta later ?
