What oil or fat do you use to make roast potatoes?

I'm making a dinner today. My H's grandfather is coming. Pressure ?. I always make a dinner anyway, he's just never had one of mine. I want to make gorgeous roasts. I normally just use oil and the juices from the chicken. I want to make them a bit different. What do you use?

    Goose fat if possible. If not I'd stick with what you normally do.

    Thank you. I was thinking about goose fat. They sell some in my local shop. I have never used it before. Are they very tasty if you use it?

    Goose fat makes the best roast tatties. Fabulous chips too. ?

    Goose fat for special dinners, Cookeen (sp?) or sunflower oil normally.

    I normally use Fry Light as we're on a long term health kick, but for a situation like you describe I'd get some goose fat.

    It`s a whole process for getting the perfect roasties, but if I told you how I make mine, I would have to kill you ? Seriously I throw everyone out of the kitchen whilst preparing mine so they don`t see what I do, but a bit of rosemary and using duck fat is always the best way to bring out the potatoes.

    I don't use any fats-too squeamish for lard or goose fat!

    I use rapeseed, olive or sunflower oil. I par boil desiree potatoes, rough em up in the pan, sometimes add a teaspoon of semolina and rough up again, and I always roast in a tray separate from the meat. I don't like meat juices mingling with them.

    Thanks everyone. I bought goose fat in the end.

    They were delicious. He was stunned, said it was a gorgeous dinner and he'll come again very soon. ?. I also has top marks for my gravy. ?
