what to do with a glut of peppers?

Roast them, ideally over a gas flame, until the skins are black. Put them in a bowl and cover them for a few mins, then peel off the skins (they'll be hot, but it should all just slide off - bit messy though!).

Slice the peppers, discarding the seeds, and pack into jars. Top up with olive oil.

You can then use them on pizzas or in paprikash-type dishes.

Thanks Tulip - do you know how long they last like that? Do they need keeping in the fridge?

I usually slice them up and freeze them, Ive always got a big bag of frozen pepper slices as theyre v handy to use in lots of recipes.

Tulip's thang also freezes. We have loads, bring them out, add vinegar and eat with bread until you're stuffed.

Sorry, GWTW, roasted peppers never last long around here, so I'm not sure how well they keep!
