When to make wedding cake??

Been practicing this weekend as doing 2" fruit cakes, how far in advance can these be made? Do you make the cakes a nd decorate nearer the time?? I remember seeing somewhere that you marzipan the cakes then store. Any advice??

    Hi Kim! My nan is making our cake for our wedding in July! She made the fruit cake in December because it will keep for ages as it's got loads of brandy in it! She will put the marzipan and the icing on it around a week before the wedding, hope this hepls!

    Hi there - cake HIB here

    If you are doing fruit cakes then you can marzipan and ice them several weeks in advance. As long as there is lots of alcohol in the recipe they will keep for ages so there is no need to have the stress of trying to do them all in the week before the wedding as you would need to with sponge.

    I would suggest marzipanning them about a month before and then leaving them for 3 or 4 days to give the marzipan time to harden off a little before covering. Use boiled apricot jam to stick the marzipan to the cake and cooled boiled water or clear alcohol (vodka is best as it has no taste) to brush over the marzipan to stick the icing in place.

    You can then leave them again for a few days (or more) before decorating as if the icing has had time to crust a little you are less likely to mark it when putting ribbon round for example and adding decorations.

    Sorry forgot to answer the first question - as the other replies have said, make the fruit cakes as far in advance as you can. The longer they have been made the better they are. Keep them wrapped tightly in greaseproof paper and a layer of tin foil and feed them regularly with a slug of brandy or whatever alcohol you are using.
