this is the one I use except i use chocolate digestives. It's super easy and just a fridge jobby, no cooking. I found best made the night before so more time to set

Arg, sorry that post was such gobbildegooch, it's a nightmare posting from my phone!

    here is my recipe:

you will need a 6 inch, deep, loose bottom (he he) tin

    Pre-heat oven 190C 375 F GasMark 5

    BASE

6oz digestive biscuits (or 5oz of biscuits & 1 oz maltesers) crushed

    1/2 tsp Cinnamon

    1/2 tsp nutmeg

    2 oz butter

Melt butter and add the cinn, nutmeg & biscuits/ malteser mix

press into the bottom of the tin

    FILLING

    2 eggs

    5 oz caster sugar

16 oz Cream cheese (about 3 tubs of good old Philli)

    1/2 tsp vanilla essence

beat together cream cheese and sugar

beat eggs then slowly add to mix

pour on top of the biscuit base

place in oven for 35/40 mins (sometimes is slightly golden and it may sink slightly in the middle, that is ok!)

    before serving add the topping

    TOPPING

    tub of soured cream

    1 1/2 oz/ 1 heaped Tbls caster sugar

Mix together then pour on top/in the dip scatter some maltesers on top then slice and serve
