Why was my pheasant bitter? Foodies please help me!

Firstly, I've not been on Hitched for ages due to being on honeymoon. Sorry that my first post since being back is asking for help

I roasted a pheasant for dinner tonight for H & I but it tasted very bitter/sour. So much so that I couldn't eat my bit. The juice even ruined my roast potatoes ?

Where did I go wrong? I washed it and pulled out the stray feathers.

The thing is, I have 3 more in the fridge (4 for £10 in the Oval farmers market) so want to get it right next time!

    Sounds like it's been hung for too long. It won't have been the way you cooked it unless you burnt it. You may find the others are the same unfortunately.

    Ooh, that sounds nice. I'll make sure I trim all the fat/skin off too, as I've just read that the fat on pheasant can make them taste bitter.

    The fat can make it quite bitter, we had pheasant for dinner tonight too but we roasted it whole.
