Give me your (relatively easy) low fat recipes...

DH has decided he wants to try and lose a bit of timber, and I'm used to buttering up my dishes (risotto is one of my more-often cooked meals...) so wondered if any of you lovely ladies had ideas for relatively quick and easy tasty low fat recipes (not that I'm asking for anything difficult there!)

    Ha! I don't think I could try that - Hubby doesn't even approve of packet/jar sauces. I've told him when/if we have an LO he may need to revise that opinion...

    Anything involving chicken and a tomato sauce is usually good, but for weight loss first try cutting out any sweets, chocolate, desserts, biscuits, cakes, alcohol and fizzy drinks (unless low cal) and that should work even if you eat the same dinners!

    If he has already cut all those out or doesn't ever eat them, just adapt recipes you already use. eg if a recipe asks for cream substitute yogurt. Dry fry everything and if you need any grease use a spray like fry light - you can make chips and roast potatoes like that.

    Thanks JJ - yes he's being good on snacks, but doesn't eat that many anyway - good point on the substitutes, and the fry light. Smiley smile I've also tapped up the BBC recipes and going to do lime and honey-glazed chicken tonight. (I know, I was surprised by honey, but it's in the diet section...)

    That sounds good! Don't forget alcohol is a big waste of calories and even some soft drinks like a glass of orange juice. I buy the flavoured fizzy water, as it fills you up between meals and is sweet. Often I also cook up loads of veg in a tomato sauce and even though OH is fussy about what veg he eats he will eat anything in a tomato sauce. Vegetable or chicken curry is good too, just don't use the gallons of oil they recommend using when making curry.

    Thanks ladies - btw JJ, I wanted to let you know that there was no problem with the concert whatsoever - I had to listen out for it even when we were outdoors!

    I can highly recommend the BBc Good Food book 101 Low-Fat Feasts. It's only about £5 and we have something from it at least 2 or 3 times a week. No recipe is longer than 3 steps and all of them use stuff you will find in the supermarket (so no 200 mile round trips to your nearest Venuzeulan deli or suchlike). There's a couple of risotto recipes in there (and Toad in the Hole!). the original book is better than the follow up I think, although I have both and am willing to work with the second one a bit.

    Oh all the recipes are calorie counted as well and the portions are enormous.

    I'd love to but apparently if you change username now it wipes your post count out. I know mine isn't that high but it was hard won and I don't want to lose it. On the other hand, better to change it now before I boost it any further. Decisions decisions...

    Ha, that's what I thought - although DebsMcI seems to have changed her's with no post count wiping...I don't know what I'd change it to mind, it would be nice to have something vaguely related but the only thing I thought of was blush princess and that sounds like a lip gloss for six year olds!

    Bombay Mince Potatoes (for a budget but filling meal)

    1lb beef mince (or a couple of chicken breasts)
    1lb potatoes (2 big ones), sliced thinly
    1 can chopped tomatoes
    1 packet Bombay Potato mix
    1 onion
    ½ pint of beef stock (or chicken)

    Get a big saucepan & fry the mince & onion together.
    Add all other ingredients & cook for about 25mins or until potatoes are tender.
    Serve with rice or a salad.

    Sounds strange but is v tasty, low fat/calorie (came from Slimming club recipe) & freezes really well.

    You just chuck everything in together & cook it in the one pot - no oven nonsense.

    Nice recipe, thanks! I'll have to try this one the next time I buy ground beef.

    Another great place to get recipes is recipes.com. They seem to have a nice selection of just about everything and the nice thing is that you can print out the recipes in 3 different sizes too if you have a recipe box. I like the personalized stationery approach but I do wish the printouts could be customized a little bet more. If I could print them out with nice backgrounds and what not I could give them as gifts. Well, maybe the site will get there one day.
