What on earth am I going to make for dinner? (Sigh)

Going to Pilates class after work so will only get home c.8.30. Then need to do a spot of washing up and cook something.

Not pasta - we had it last night.

Not rice - had that on Monday.

Not sausages - had those on Tuesday ?

Not salad - have had that every night this week ?

I've got broccoli and potatoes, so ideally something that includes those. Can get to fishmonger at lunchtime but that means carting fish with me to the gym - not ideal but can be done. Otherwise my shopping options are crappy Sainsbury's local or very very cheap butcher - okay for lamb and beef but I wouldn't trust his chicken at all.

Any ideas? This is one of those nights when tbh I'd love to just order a takeaway - but see previous posts abouut the impossibility of getting anything that's a. nice and b. not swimming in lard.

    Hmm well I would just do something simple like omelette with the tatties and broccoli.

    Or roasted veg & couscous?

    I fear my culinary standards are lower than yours though (see Tues eve post on what to have for dinner, which culminated in us munching down on scrambled egg on toast ?)

    ? Minerva and R-A - looks like the Hitched money is firmly on something egg-based. I have courgettes too, yawn, so that might be a winner.

    I was thinking about this this morning and asked myself "What would Hitched do?" and the answer was omelette... the truth is I don't like them very much. So ner, Elizabeth David.

    Have you any tins of tuna - make fishcakes with your tatties (add in onion/spring onion/herbs) and serve with steamed broc.

    Nigel Slater has a really nice recipe where you heat some chopped anchovy and mix with spinach and creme fraiche. I don't know if you could do something likethat with broc instead - the anchovy flavour is really delicate and picks up the flavour in fish cakes...

    How about making savoury pancakes? You can ditch the potato & use that another time

    Steam the brocolli, grate some cheese, do you have ham/chorizo etc? Mushrooms, grilled courgette etc would all make nice toppings, or roll them up, grate some cheese on top and grill?

    I would get some salmon (although I always have salmon in the freezer, hence it's my quick meal option generally), poach or fast roast, while baking potatoes (in microwave first) or mash them, and brocolli as side.

    I would do salmon too - grilled with some creme fraiche mixed with horseradish on top (don't laugh), and crushed new potatoes

    Fark. Had made up my mind that tortilla/frittata was the way forward, so didn't go to the fish place at lunchtime, and have just remembered that the place where I was planning to get eggs en route home is closed for its summer holidays. Why is food shopping so damn complicated?

    I would have either:

    1. Baked potato (microwave, then finish in the oven to get a nice crispy skin) with steamed broccoli and cheddar cheese on top

    2. Broccoli and potato soup (would also need onion and milk - stilton or cheddar/gruyere optional) with a nice crusty piece of bread

    Both would be ready in 20 mins max.

    Ah, I don't have a microwave either ?

    Will go to M&S/butcher en route to gym and spend a fortune on random stuff see what looks market-fresh.

    Just boil the spuds, steam the broccoli and squeeze tomato sauce all over. It'll be quick, at least...

    Do a sort of aloo gobi but with broccoli instead of cauliflower, with rice. Actually you could do the Leon Gobi in Leon- I always use normal spuds, not sweet potatoes, sub the B for C and peas or similar from the freezer if you have them. Just need a tin of coconut milk and some herbs etc.

    Flissy, that sounds utterly rank, no wonder you are so thin ?

    KN, I'm not a huge fan of vegetable curry. It's another of those things that I feel I ought to like, but don't particularly.

    Soph, how can you write off vegetable curry just like that? For a start, it covers a hyooooooge number of dishes, in fact I don't think we've ever had anything resembling the same 'vegetable curry' twice at home, despite eating a variation on the theme at least twice a week. Gawd, you aren't half fussy! ?

    (Although I'm with you on the omelette thing)

    There is, I'm just trying to avoid going to bloody Sainsbury's AGAIN.

    The thing is with veg curry, I think, it's one of those meals that's quite nice when other people make it, but not something I ever seem to be in the mood to make myself.

    Poor Hitched, I am such a pain ?

    So this is not utilising any of the ingredients you have at home but it's yummy and I had it for dinner last night. A tuna melt made in a wrap. Just lay out the wrap and spread one half of it with grated cheese, grated carrot, sliced avacado, tuna and plenty of salsa. Fold over the other half and place in a hotish frying pan, no need to add oil. Cook both sides and ensure filling is hot.

    Sounds rank, but tastes yum. I have it with chips, but you could have you veg instead.

    Omlette Arnold Bennett?

    Smoked haddock, eggs, a little cream and parmesan.

    Poach the haddock and flake it.

    Beat eggs with a little water, stick in frying pan, and when bottom side cooked stick it under the grill to cook the bit at the top. Fling on the haddock, some creme and parmesan, stick it under the grill again until it goes lightly brown, and then fold over and serve.

    Obviously it is too late for tonight, but maybe another day? ? (it sounds horrible, but honestly, it is delicious)

    ? I made burgers. Used up the spuds at least - I realised that what I wanted was non-worthy food. Really want to try the Arnold Bennett omelette so at least one poster wasn't wasting time on this thread ?
