WW recipe's please

Hi going to get stuck in to WW next week and want to get organised this week and try and do a 2 week menu but the recipe book I have called Cook! hasn't given me much inspiration.

My husband is the biggest pain as he doesn't eat fish and I really don't want to go down the route of doing 2 different meals as I will become lazy and then just buy ready meals for me and that I don't want to do and can't afford to do. I probably will go for a ready meal once or twice a week so that hubby and the kids can have some sort of junky type food. We love spag bol and chilli and things like that. I also love to use chicken a lot we don't eat pork (don't like it) but do eat bacon etc I also don't like fresh toms but use tinned for recipe's please help want this too work but need at least 10 different recipes. Thanks Don't need lunch ideas or breakfast as have those sussed and pudding will always be fruit or WW yogs.

    I just made the thai curry - it was lovely.

    For the paste you need:

    2 shallots

    2 cloves garlic

    1 red chilli

    2 inch piece fresh ginger

    1 lemon grass stick (outer leaves removed)

    zest and juice of a lime

    handful of coriander

    4 tsp fish sauce

    Throw it all in a blender and whizz until pulped

    In a wok saute a butternut squash (cut into small pieces) for 5 mins. Add a cubed aubergine and cook for 3 mins. Add the paste and stir in one can of low fat coconut milk. Simmer for 10 mins then add green beans and chicken. Simmer until chicken is cooked through.

    I used prawns instead of chicken tonight. With rice it worked out around 7 points.

    Yum.

    I would say its best to adapt recipes you already know that you like tbh, although I do think the WW mag has some good ideas for meal planning.

    In an average week we'll eat something like

    Risotto (with mushrooms or leeks or BNS)

    Pasta & tomato / veg based sauce

    Veggie curry with rice or naan

    Jacket potato with beans / cott cheese

    Stir fry (veggie and/or quorn) with rice or noodles

    Omelette with new potatoes and salad

    Quorn mince with jacket potato/mashed potato

    Also lots of soups.

    Thanks ladies it is so hard when hubby eats very little veg and I refuse to cook different meals every evening.

    I think I almost have a 2 week menu so thats looking good. Just need to sit down and work it all out lol
