Reminds me of a wedding I shot where the groom was into all things airshow and the bride organised a secret surprise one aircraft airshow for him which also entertained the guests.
Other ideas could be if he is into sports cars, arranging a surprise ferrari - or whatever his favourite car to pick him up and take him to the wedding.

I'm thinking about doing something similar and getting his first flying lesson because he wants his private licence.

I mentioned somethink like flying lessons but his reply was no no no so if your partner wants to get his licence it would be a really good gift x
