Why did my fudge burn?

I used to make fudge lots when I was younger with no probs. But last night when I tried, it burnt really badly on the bottom before it had reached the right temperature on the thermometer. So I ended up taking it off the heat before it was ready, and have ended up with a weird tasting not-quite-right textured substance (obviously I'm still eating it, it's made of sugar, butter and milk?).

What did I do wrong? Wrong sort of pan maybe? It's a fairly heavy-bottomed one.

    The weird substance you have is probably tablet, which as we all know is fudge-gone-wrong....... ??

    Lower heat for longer would be my first thought. I love fudge. Now I might have to make it. Bad MrsPip.

    You possibly increased the temperature too quickly. The only other things I could think we're that you're pan wasn't heavy bottomed enough, that you didn't stir sufficiently or that your sugar thermometer is playing up. I make tablet quite a lot and every now and again I make a duff batch- like you, I just yet to make the best of it (usually use it as caramel sauce with puddings or pancakes).

    2 remove jk from list of favoured hitcher tablet recipients ? ?

    3 also say 'naughty Mrs P' because I now too find myself reaching for the condensed milk. ?

    Stirring - well for some reason I thought you weren't supposed to stir it once it was boiling, so I left it to its own devices. Sounds like maybe I had that totally wrong. Are you meant to stir throughout?
    Sugar thermometer - very possible explanation. It is really really old, I think it was prob my mum's old one that she gave me about 10 years ago.
    Will also try different pan next time.

    I think you can stir up until it reaches 'soft ball' stage, which is usually after quite a bit of simmering.

    Aha. Will try that next time. Thanks.
    Am working from home, keep going down to cut myself another small piece of the fudge-like stuff, coming back upstairs, eating it and going down again for a bit more. Don't know why I don't just bring the whole blummin tray up.

    I thought you had to beat the stuff to within an inch of it's life when it was cooking - needless to say, the Pumpkin family NEVER have homemade fudge - too much effort and too little energy.

    Fudge has to be stirred constantly to avoid burning. CONSTANTLY.

    Mmm, fudge. I do have the ingredients.....

    Thanks Randy, that is obviously where I went wrong. I knew there was something that MUST be done, but I think I thought it was that it MUST be left alone and not stirred. Oops!

    I've never made fudge. I think I need to now. Does anyone have a numpty-proof recipe?
